My grandfather used to have full kauli (small steel bowl) of ghee everyday when he used to work in the fields, and also shakkar (dont know what is called in English) with full kauli of ghee in wheat harvest days. He never had any issue with heart disease and diabetes. This last 30 odd years war on fat is over with new research coming up, the real bad guys now are carbs and refined sugar. Being Sikh Punjabi person so I suppose our food habits would be very similar to Pakistanis. That said, you guys cook meat better than this side of Punjab, and also found your Kheer better than ours.
Don't know the rest of India, however, Punjabi people (both Hindus & Sikhs) drink crap loads of milk every day, and won't be surprised if their per capita milk consumption is way more than the rest of the world.
Yep most of the Punjabi homes in Indian side also had Tandoor especially when I was growing up in 90s. However, those Tandoors were mostly used for making Rotis not Tandoori Chicken.
