Shorshe Ilish (Mustard Hilsa curry)
This is the most famous Bengali cuisine may be. The most tasty Hilsha fish is found in river Padma but sad part is Bangladeshi Padma's Hilshas are mostly exported to West Bengal. So Bangladeshis actually don't get chance to enjoy delicious Padma's Hilsha as much as Indian Bengali does. We are left with not so tasty Meghna's Hilsha.

But, as far as I know mustard oil is bad for heart. I am not sure about it, but, usually I avoid it. It has high cholesterol content, is not it? Could you please check with another doctor/heart specialist?
A comparative study of different edible oils has shown that mustard oil as a cooking medium can reduce the risk of heart diseases by over 70%.
"A heart-friendly oil should be cholesterol- and trans-fat free, low in saturated fats and high in monounsaturated fat (MUFA) and polyunsaturated fat (PUFA), it should have an ideal N6 to N3 acids ratio and a high smoking point. Mustard oil meets all these criteria and that's why it is the best cooking oil," said Dr SC Manchanda, co-author of the article and senior consultant cardiologist at Sir Ganga Ram Hospital. He said oil of canola, a close relative of mustard (brassica family), is equally beneficial but is rarely found in pure form.
About the much-hyped and five times costlier olive oil, Manchanda said, "It has many good qualities, for example it is considered the best by some because it has the highest (75%) content of MUFA - the best type of fat because it lowers bad cholesterol and elevates good cholesterol - among all other oils. It also contains a wide variety of anti-oxidants. But its main limitation is that it does not have an ideal ratio of omega-6 (N6) and Omega-3 (N3) fatty acids useful in reducing heart complications."

Mustard oil has got a typical pungent and sharp flavour that is because of the presence of a compound called Allyl Isothiocyanate. This oil has about 60% monounsaturated fatty acids (MUFA), 21% polyunsaturated fats (PUFA) and about 12% saturated fats. A higher amount of MUFA and PUFA distinguishes it from other types of fats. These fatty acids are also called good fats as they do not get deposited on arterial walls. Mustard oil contains Glucosinolate, which basically works against microbes and adds on to the oils health benefits.

what cooking oil do you prefer, I would like rice bran oil with have less cholesterol, low chance of oil hydrogenation, less sticky, best for deep oil fry because of having high smoke point, and also contains more antioxidants than other edible oils
