But I have seen that Indians pour methi and Curry leaves in everything ! Even in Qorma ! That is catastrophic for a Qorma dish.Exactly, curry is only the above dish I posted.

The most abused ingredient is tomato which kills the flavors of any mughal dish. Tomato is being grown not so long ago after Columbus discovered it in America. It arrived in the Himalayan subcontinent not so long ago let alone mughal time. The same can be said about chillies. Mughals used black/white peppers and sometime local long pepper . The real trick to give an authentic mughal gravey the desired thickness is to use fried onions and yogurt.Actually those are just bastardized versions of Mughal/Muslim dishes.
I have even seen Gujuratis obsess over a dish called 'rajma' which tasted like just curry sauce without substance, later I found out it was supposed to be kidney bean sauce.
Pakistanis even do daal dishes justice, but I feel like Indian cuisine is haphazard and all over the place. There is no science to the cooking.
For example, we never eat saag without makki di roti, no matter what.

Name one scientific achievement or philosophical achievement during Mughal times or since 12th century? Anything, mathematics, alchemy, medicine, philosophy. Actually the Mughals decivilized India people went from a country where the exchange of great ideas originated and to poverty stricken, clotheless people that was the situation of Mughal empire when Brits arrived at the shores of Bengal, these are from British accounts.Islam civilized India, otherwise it was a free for all with rapist looters like we see with Marathas and the new Hindutva rapist lynch mob masquerading as a country under Moodi.
