Thats a very short amount of time man. I went to Istanbul 2 years ago for a week and still felt like I had missed stuff. Nevertheless the main core of touristic sites in Istanbul are centered around the Sultan Ahmet area. You will find Aya Sofia, Blue Mosque and Topkapi right next to each other. These three alone will probably consume all the time you have. So take a taxi from the airport to Sultan Ahmet and you can explore these sites. With regards to food I cant really help. All the food I had with my friends was chicken, fish or lamb. Turkish members could help more on vegetarian Turkish food.
