I would prefer one engine, if that engine will be the same engine as MMU's engines. Logistically that would be more easy and economical.

I was surprised to see the dual engine in the first place to be honest. Trainers are almost always single-engine to minimise cost per flight hour, which is very important because that affects how much training pilots get.
 
I think we are taking a very unique approach here. Hurjet is in essence a trainer but it will most definitely be adopted as a ground attack fighter (like HURKUS). That means we are basically following the US' dual fighter fleet approach (f16-f15/f35-f22).
We will have a dedicated expensive, tough air superiority fighter, the MMU, and a cheaper multirole fighter, the hurjet. As such using a single engine (especially that of MMU) will be a good thing, but I wouldnt dismiss an afterburning engine so easily.
