Why did not Israel opt for a larger aircraft like the 767 for this platform ?

Well its doing the job, its much cheaper to operate and has considerably higher altitude. Its downside that it has two L band radars instead of 3 as on IL-76 platform. But two are also enough.

Also its not that small as it seems. G550 max take off weight is about two times more than Saab-2000 used for Erieye (41.3 t vs. 23 t).

ZDK-03: A variant designed specifically for export to the Pakistan Air Force (PAF). Consists of a Chinese AESA? radar mounted on the Y-8F600 platform.[11] The radar is reported to have a greater range than that of the PAF's Saab 2000 Erieye AEW&C radar [12] and the aircraft incorporates open architecture electronics to make future upgrades easier to implement.[13] Delivery of the first aircraft to the Pakistan Air Force was expected by the end of 2010.[12] The first aircraft was reported to have been delivered in November 2011 by Pakistani media------Four Chinese ZDK-03 AEW&C aircraft have also been ordered, with first delivery expected in late 2010.[139] These are believed to be a PAF-specific version of the KJ-200, incorporating a Chinese AESA radar similar to the Erieye mounted on the Shaanxi Y-8F600 transport aircraft.------wiki



The ZDK-03 Karakoram Eagle Airborne Early Warning and Control System (AEW&C) was developed for the International customer. Pakistan Air Force (PAF) has ordered four such aircrafts, first of which is already in Pakistan.
The ZDK-03 AEW&C Karakoram Eagle uses Active Electronically Scanned Array (AESA) Radar in rotodome mounted above Y-8F600 fuselage to provide 360º radar coverage.
