Baluchistan:
The following list involves the popular cuisines of Baluchistan.

  • A rock-hard prepared bread known as Kaak is commonly ate by Baluchi people.
  • Dampukht is also a Baluchi dish which is made by meat and it is extensively cooked in fats.
  • Khaddi Kabbab is a food item in which Baluchistanis cook the complete or whole goat or lamb on fire. Commonly, the raw rice is placed in the stomach of the lamb and the raw rice is cooked completely by the fats of the lamb.
  • Fish: major population of Baluchi people surviving on the coastal belt eats large number of fishes in their own way.
Azad Kashmir:

  • Sindhi Baryani
  • Vermicelli, usually served as a sweetened dessert, is very famous: Muslims serve it on the occasion of Eid.
  • Kheer Kharkun, a special dessert, is made and served on the festival of Eid. It is prepared by mixing milk and dates, and gradually simmering the entire mixture for some hours. The dessert is eaten cold in summer season and hot in winter seasons.
  • Bahji known as Chiti-Kuni is prepared with 7 vegetables. Commonly offer at Diwali occasions.
  • Mitho lolo, a sweet griddle-roasted flatbread. On the eve of special religious festivals, mitho lolo, complimented with milk, is provided to the poor. Mitho lolo is also offered with chilled buttermilk known as Matho on several events.

DIVERSITY IN PAKISTANI REGIONAL FOOD CUISINE





Regional Cuisine :
Pakistan cuisine can be described as a refined blend of various regional cooking traditions of the South Asian subcontinent. Pakistani cuisine is known for its richness and flavour.Within Pakistan, cuisine varies greatly from region to region, reflecting the country’s ethnic and cultural diversity. Food from the eastern provinces of Sindh and the Punjab, as well as the Pakistan-administered Azad Kashmir region, is quite similar to the cuisine of Northern India and can be highly seasoned and spicy, which is characteristic of the flavours of the South Asian region.Food in other parts of Pakistan, particularly Balochistan, Gilgit-Baltistan, Khyber Pakhtunkhwa and the Federally Administered Tribal Areas, involves the use of mild aromatic spices and less oil, characterizing affinities to the cuisine of neighbouring Afghanistan, Iran, and CentralAsia.. However, given the diversity of the people of Pakistan, cuisines generally differ from home to home and may be totally different than themainstream Pakistani cuisine



1) Punjabi cuisines :
Punjabi cuisine is food from the Punjab regions of Pakistan It can be non-ve Getarian or completely vegetarian. One of the main features of Punjabi cuisine is its diverse range of dishes. Home cooked and restaurant Punjabi cuisine can vary significantly, with restaurant style using large amounts of ghee(clarified butter) with liberal amounts of butter and cream, with home cooking concentrating on mainly upon preparations with whole wheat, rice and other ingredients flavored withmasala.Within the Punjab region, there are different preferences. People in the area of Lahore prefer stuffed parathas and dairy products. In fact, the area is well known for quality of its milk products. There are certain dishes which are exclusive to Punjab, such as sarson da saag and makki di roti. The main masala in a Punjabi dish consists of onion, garlic and ginger. Tandoori food is a Punjabi specialty especially for non-vegetarian dishes. Paratha ,Halwa poori .Falooda ,Lassi are typical dishesh of he punjab



Pashtun cuisine :
Pashto refers to the cuisine of the Pashtuns, who are predominant in Afghanistan and western Pakistan. The cuisine of the Pashtun people is covered under Afghan cuisine and Pakistani cuisine, and is largely based on cereals like wheat, maize, barley and rice as well as a plethora of meat dishes that includes lamb, beef, chicken, and fresh fish. Accompanying these staples are also dairy products (yogurt, whey, cheeses), including various nuts, locally grown vegetables, as well as fresh and dried fruits. Cities such as Peshawar, Jalalabad, Kabul, Quetta and Kandahar are known for being the centers of Pashtun cuisine. Typical Dishes Kabuli pulao Seekh Kebab Shami kebab,Chapli Kabab Shorwa (soupe) Aush hand made noodles) Bolani also known as Burrani.

Kashmiri cuisine Kashmir is based on the ancient tradition of this area.Kashmiris were heavy meat eaters. This habit persists in today’s Kashmir.The most notable ingredient in today’s Kashmir cuisine is mutton, of which there are over 30 varieties.Kashmiri cuisine has had the earliest influence on Kashmiri Pandit cuisine. Usually, Pandits do not eat meat, however the Pandits of Kashmir have always eaten all meats except beef. Beef is strictly forbidden in Kashmiri Muslim cuisine. The Wazwan of Kashmiri Muslims never allows for the usage of Beef Typical Dishes Rogan Josh Yakhni Yakhni Dum Oluv Phirni Wazwan a multi-course meal in the Kashmiri Muslim tradition, is treated with great respect. Its preparation is considered an art. Almost all the dishes are meat-based (lamb, chicken, fish). The traditional number of courses for the wazwan is thirty-six,



Sindhi cuisin:
refers to the native cuisine of the Sindhi people from Sindh, Pakistan. The daily food in most Sindhi households consists of wheat-based flat-bread (phulka) and rice accompanied by two dishes, one gravy and one dry. Today, Sindhi food is eaten in many countries including India, where a sizeable number of Sindhis migrated following the Partition of India There are food that are served during special occasions, s Bahji (vegetable dish) called Chiti-Kuni is made with seven vegetables. If some gets chicken pox and after it is gone, it is common to make an offering and make “mitho lolo”, a sweet griddle-roasted flatbread the dough is wheat flour mixed with oil (or ghee) and sugar syrup flavored with ground cardamom. Sai bhaji chawal, a popular dish from Sindh consists of white steamed rice served with spianch curry which is given a ‘tarka’ with tomatoes,onions and garlics ,Within Pakistan, cuisine varies greatly from region to region, reflecting the country’s ethnic and cultural diversity.people live in different region and have diffrent Food according their regions but now due to globalization people live in that area have also change their way of eating. International cuisine and fast food are popular in cities. Blending local and foreign recipes , such as Pakistani Chinese cuisine, is common in large urban centres. Furthermore, as a result of lifestyle changes, readymade masalas are becoming increasingly popular. However, given the diversity of the people of Pakistan, cuisines generally differ from home to home.

Pakistani cuisine is intricate and delicate. But Pakistan being a poor country, the food is usually cooked in a crude and cheap manner which doesnt do justice to the fineness of these dishes. Therefore sometimes i feel the urge to open an ultra high-end triple michelin star standard pakistani restaurant. But i am not that rich to do that kind of experimental investment. I have to make my money count. But when i do get rich i'll surely open this restaurant.:buba_phone:

cultures & languages of each province in Pakistan should be promoted and given national status....
 
Indian and Pakistani food festival should be organized to promote the subcontinents food. This will pave the way for increased people to people contact and will certainly improve relation, trust and reduce tension. Their are many more things which should be done to improve relation like, amending constitution of both countries to have dual citizenship like in europe, India can built the largest statue of jinnah in pakistan like china is building Sardar patel's statue in India. Cricket series is a must, both countries cricketers can play for either India or Pakistan. India is known for best batting and pakistan for best bowling and we can make a perfect team like RSA.Matches should be organised in India as pakistan is not safe and people should cross the border in buses/trains to watch the matches. All these can be done if there is a will but doubt if PA would let civilian govt do this because they are feared to lose pakistan governance and their position.
