In fact, Chinese people seldom eat fried noodles.I haven't had it for years. When I went to school, there was fried noodles in the school cafeteria.
Northerners eat steamed bun, southerners eat rice, and people in Xinjiang eat pouches
Delicious is fine.
I've been eating rice for the first time in seventy years, and it's quite a change from my usual diet. On the Chinese side, I've been making fried rice, again, with whatever veg. is floating around, and it's a change from either south Indian, or north Indian or Bengali rice combinations (Bengalis have a fried rice too, but it will be too rich and spicy for you guys, you might not like it).
Oyster sauce or Hoisin sauce is good. I don't know much about cooking and Fish sauce, not so sure if it's good.
You may be right to caution me, the recipes have only oyster and Hoisin. Nobody's mentioned fish sauce. Maybe I'll stay away.

Thanks, guys, while I've been licking my lips thinking about Chow Mein and Fried Rice and (my favourite) Egg Foo Yong, my potatoes burnt.
I'll be thinking of you as I scrub my vessel clean.
