6 days. I'm going to Hanoi first and then to Saigon. Can I get any suggestion from you about the tour sites? My wife and I want to explore the most decent places in Vietnam, the restaurant, the historical stories, the natural scenery and the most modern districts in Hanoi or Saigon.

And I guess you would return to China from Saigon/Ho Chi Minh city?

I would check the weather first.
As checked, it would be risk of heavy rain,strong wind to take some trips to Sapa or Ha Long Bay.
The landmark I recommend to you for first day after the ETA is Tam Coc - Bich Dong, in Ninh Binh province, the location of Kong: Skull Island filming, with nickname "Ha Long bay inland"
Stay 1 night there for more exploration, or you just take a day-trip depend your taste.
Remember, if you stay in Hanoi Old Quarter area, the tour bus ( of any tour from Hanoi... ) would pick you up at the hotel, to the destination and later return you to the Hoan Kiem Lake or your hotel. If you stay there, you could book any tour easily as the Old Quarter is for tourists. Check the price online first and make as many bargain as you want ( LOL )

The Southern Vietnam weather is ok for any outdoor activity, beaches ..
And to be frank, the beaches in the Middle of Vietnam ( Nha Trang, Quy Nhon, Mui Ne, .. ) are the best, plus Phu Quoc island ( the island face Thailand bay )

I'm flying to Hanoi and returning from Hanoi to Beijing, because this is the only none stop flight between Beijing and Vietnam

You have only 6 days, at least 2 days in Hanoi for arrival and departure time.

You should think about booking flights between your destinations. Recommended.
Vietnam has no HSR, but the air ticket is not so expensive ( depends on the departure time of flight ).
Try Bikini Airline ( Vietjet Air ).
Hanoi - Da Nang ; Hanoi - Quy Nhon ; Ha Noi - Nha Trang ;

combined with overnight express coach. or night train.

The shuttle bus to/from Hanoi airport is No. 86 : fare 1.4 USD/one way to a few stops near Hanoi center
or simply you request Uber taxi ( a Vietnam cellular SIM may needed )

Surprising that You could use any software as Talk It ( designed for English ) to talk the location name ( without accent ) in Vietnam correctly. For example "Ho Chi Minh" "Tran Phu" "Sao Hom"... as city name, street name, hotel name .. Try it, because the Uber taxi would call you after your order, to know your exact location. Just tell him the address, for example "Number 5 Luong Ngoc Quyen". Uber fare in Hanoi is about 25 US cents / km ( UberX ) or 50 cents / km ( Uber Black ), for any distance, no minimum

Thanks for your advice, my flight only takes 3h 35min from Beijing to Hanoi, so I think it won't take me 2 days for arrival and departure.

Saigon has probably 10,000 pho restaurants, difficult to try all and decide which one is the best? :D

actually it depends on your taste and budget. you can go to the nice restaurant or sit down at the next food seller. I can tell you how I make my day when I visit VN. do like othe vietnamese do.

I start the morning breakfast with a "banh mi" and a cafe at the next street vendor.
