Yup because I don't like mutton and beef..
with all due respect to chicken lovers .. flesh of chicken is simply not for the dish like Haleem or Nihari ! next what chicken ke leg piece ka paya !

Real Nihari will always made from Cows beef from low legs.
u are confusing it with Payas ! meat of lamb is best suited for Nihari.
 
Best Nihari is not in Lahore, it is in my kitchen. Not only for taste, but also for the quality of ingredients and hygiene :)

I ate once in a lahori takeaway.. did not like it... may be I should stick to chicken like @Zain Malik ..

may be it was paya... i dont know the difference...
Paya is made of trotters ( roasted ) of Goat/lamb/Cow/Buffalo .. !
Nihari is mainly from shank or shin or Nalli !
However in Hyderabad they Mix Trotter and Shanks both in Nihari .. hence the name "Paye Ki Nihari"!
they also add : Tongue !
