I mean how the hell does one torpedo sink a modern ship that is designed to counter the exact same threat...??

Torpedoes have always been devastating weapons. They carry a heavier explosive load than most AShM and are designed to explode in such a manner and place underneath a ship as to actually break the back of a ship, ripping it in half. This they can to very well even with larger ships e.g. 3000-4000 tons.
