I am sorry but Afghans, indians, Pakistanis are also taking "YOUR" Kebabs as well.
I think its such a basic and logical dish that you cant claim it to be yours like
Baklava which I would say its Turkish but it has Jewish roots.

I mostly found Iranian dishes to be bland but the taste buds change over age. I last visited back in mid 80s via taftan. but Iranian dishes are simple and healthy as well.

You ever have the bharti paneer kebab? That's also a delicious alternative to meat.

Azar means Kebab is Turkish...?
Azarbarjan is a Persian name and in fact was Azarbayegan (Arabs can not pronounce "G" that's why it turned to "J") which is made of 2 parts Azar+Bayegan ... Azar means "Fire" and Baygan means the guardians in Persian .. which means the guardian of the holy fire .... a fire temple ...

According to a modern etymology, the name of Azerbaijan derives from that of Atropates, a Persian satrap under the Achaemenid Empire, who was later reinstated as the satrap of Media under Alexander the Great. The original etymology of this name is thought to have its roots in the once-dominant Zoroastrian religion. In the Avesta, Frawardin Yasht ("Hymn to the Guardian Angels"), there is a mention of âterepâtahe ashaonô fravashîm ýazamaide, which literally translates from Avestan as "we worship the Fravashi of the holy Atropatene."​
