No, they are actually good quality healthy young bulls, big ones, which are found in Haryana, Punjab, MP, etc. Older cattle not only taste bad, the quantity of meat is also very low, any butcher selling that will lose customers.

@bongbang for goats we have a specific criterion, it has to be a young castrated male (khasi), we don't eat uncastrated goats or female goats. Do you have any such criterion for cows? Especially balls or no balls? :D

Any healthy cow, will easily go by the name of Desi cow. Which we like are usually browninsh and specially raised for occation. So they look nice

And poor quality not feed well. White cow maybe used for ploughing will be seen as Indian cow. They have less demand.

We also like khashi and castrated cows. They dont have odd smell.
