I don't know about Indian born in US but we native Indian never do such thing. Infact when you ask a china-born chinese his name he will first say his English name, only after pressing they will tell the real name. One Chinese guy told that everyone is given an English name in English classes in China.
How do you know they're not from Hong Kong or Singapore, where English is an official language, or overseas Chinese?
Here's a list of all the graduate students at a random university in the West that I picked.

There's even an Indian that changed his name (George Deepu) but none of the Chinese changed their names.
