Kafir does not equal non-Muslim. The word Kafir comes from 'Kufr', which literally means, covering and hiding something (i.e. the truth).
The label Kafir can only be applied to someone who has knowingly rejected the truth out of arrogance, examples being: Iblees (Satan, basically) and the kuffar of Makkah. Not every non-Muslim on Earth.

In 6th century Arabia, PoWs could be made slaves. But quite a while ago, slavery was banned in Islam by consensus of Muslims (ijma), which is a legitimate authority on Islamic law.

Jizya was a replacement for Zakat for non-Muslims. All Muslims must pay Zakat, but that doesn't apply to non-Muslims, so If you lived in a proper Islamic State you'd pay Jizya in the same way you pay taxes nowadays.

It's the same tax with a different name to differentiate it from the religious principle that Muslims have to follow. If you have a problem with paying taxes, well, nothing I can do there.

You are attempting to justify slavery and discriminatory tax practices including "kharaj" imposed on "Dhimmis" (means conqured), who were second class citizens.

One wonders why there are no words of praises for the Kharaj and Jaziya from the "Dhimmis".
