totally ruined mutten in beans.. doesn't look nice...but that first dish kid gosht besides a fucked up name looks yummy

Kid refers to baby goat. And it actually is kid gosht. Very tender, very succulent.

The other dish is to die for. Its cooked for hours. And its paya. Not mutton. With these beans (I don't know what they are called for you guys). Eaten with a garnishing of chopped spring onions and broon. My nani used to make it best. Fingers should stick together after eating it.

The rest of the world (people who rave about French/ Italian/ continental cusine) has no idea that when it comes to food, the subcontinent rocks at a level they can't even begin to imagine :D

Our food is much different than both Pashtuns,Panjabis,Sindhis or other ethnic groups.,

It's not spicy.. Meat can be dried under the sun,cooked under a fire (buried),buried in charcoal/wood., or on stone..

Also you don't cook any vegetables or dahi dishes? Just curious.
 
I can see that....but I really liked the potatoes with the meat so simple, straight forward and lovely.....I want to eat it off the screen.

The meat is prepared by digging a hole in the ground ... Wood is burnt in that hole... Than when the wood turns into red hot coal.. The coal is taken out .. Sheep/lamb (over 1 years) is given a few cuts.. Salt is put into those cuts... And buried.. The hole is covered with a metal plate and the coal is spread on it...:
