Medieval total war 2 game is one of the better games to learn Military tactics.

All the tactics the OP is discussing were made possible because of

1) Speed of attacks
2) Horse archers

i) Mongols are trained to ride a horse even before a child walks and one can easily say a mongol spends half of his life on a horse.
ii) A mongol can shoot arrows while retreating from the charge or running away (Hit and run tactics).
iii) A Mongol can shoot 4 to 5 arrows in less than 1 minute.

Following video shows how mongols used to fire arrows in quick succession

Armies in those times were trained to stand and fight in the battle, But Mongols brought a new style called "Hit and Run tactic"

a) The enemy is intimidated with arrows and made to chase mongol cavalry who used to run once the enemy gets closer.

b) During the chase Mongols used to hunt the horse cavalry of the enemy with arrows and thus making them weaker.

c) Once the horse cavalry becomes weaker the whole of the enemy formation comes into disarray, seizing this opportunity the mongol cavalry used to charge the infantry and used to hunt them down.

More than the swords , arrows did the damage to the enemy.

Mongols have more number of horses and so have the advantage of speed,mobility and surprise.
