In fact, even many Urdu knowing Muslims from Bihar can't pronounce Z.

I've witnessed Hindus making fun of Bihari Muslims for the same (jokingly, all friends). So...

Urdu/Hindustani which has undergone "shuddikaran" to remove Persian/Arab words and, instead got this slang of the villages. jabardast, jaroorat sab kuch ja ja ja... Only solution is to promote romanized Hindi/Urdu instead of Devanagari or Nastaliq lipi. Urdu is seen as Muslim language and the sanskari RSS militant Hindus and their supporters are adamant on destroying this beautiful Indian language. Both Urdu and Rooh Afza belongs originally to India, but flourishes better in foreign lands where they claim both as "their heritage".

I agree with Urdu and Rooh Afza and RSS dumbfkry about shuddikaran and everything.
But Hindi alphabet does add Z as an additional consonant, regardless of influence or not.

What I've noticed is that the Z to J is a very region specific thing, concentrated in some rural areas of the North.
There's this person I know who's an Urdu expert and a Muslim. But when it comes to Z, NOPE, just can't. OTOH, those who studied the made up artificial official Hindi do it with ease.

Yes, we all grew up learning Hindi despite have no relevance in our daily lives (as from southern India). I know, you are hinting about ज़ ड़ ढ़ etc. But, in daily lives they use ja only. You have to hear the proper Urdu, that some regions in Hyderabad speaks. Their pronunciation is correct. The Kashmiri merchants in Kerala cities and hill stations, they too speak good Urdu, a nice change, without that heavy Haryanvi/Punjabi mixture or the rural Bihari/UP slang.
