Its not just education. Remember, they used to be Gods favorite people. We, muslims being the followers of Prophet Mohammad faced many problems but used only faith to overcome the problems. Israelis were actually helped by God himself. God himself used to send Man-o-salva from heaven for the israelis. They got the extra help that no one else did. And yes they are genetically smart.
