These rituals predate Islam I think.

Things from past get associated and absorbed in religion. Religion is always evolving as customs may add or lost.

Because Goat used to be common animal Muslims had back in the days especially where Islam started. Even today. It also feeds many. So it became a custom.

Why killing a Goat instead of some thing else??

Because it is easy to find and kill.
Cant do that with a Bison or Rhino; though they are a plenty in South Africa. Safaris get organised there to hunt them.
