After releasing the people from bondage Moses was given the ten commandments while the Israelites camped near Mt. Sinai.

The only historical reference that a group of people who called them Israelites comes from the ancient texts of the Egyptians where they hail the King of Egypt who conquered Israelites and took away their treasure.

What would be the population of world at that time? Which few civilisations were present at that time, were they aware of each other? Did they have easy global access to each other? I don't think by any means Moses would have been able to reach other nations in any case. Your classification of gentile includes the world populace plus Pharaoh and co.?

Plagues have been mentioned in the Holy Quran. They have even tried giving scientific explanations of the plagues for e.g. turning red of the river and locusts which is quite interesting.

It is almost next to impossible to date these events since whatever we know is subject to much archeological debate. The timeline generally agreed upon does not satisfy a keen eye and i would rather not discuss the timeline since there is hardly any agreed upon technique for dating the evidence be it carbon dating or other methods.

Gentiles are the people who do not belong to the kin of Abraham. Extremist view would be only the kin of Isaac with Ishmael not included since Jews trace their lineage from the mother not the father much like most ancient cultures.
