Why does Israel need over 300 nuclear weapons?

Israel in fact has one of the strongest nuclear arsenals on the planet.

Why would a country want to have nukes?

So they don't turn into an Iraq, being invaded due to lies, and being utterly unable to do anything about it. Because they don't want to be China in 1950 when the USA was threatening to nuke us out of desperation during the Korean War. So they don't become a Hiroshima and a Nagasaki.

I don't take that 'last resort' strategy seriously, if anything the people there are terrified of being wiped off existence in an even of a all out war.
