The opposite spectrum are polar gnomonic charts.
In mercator, areas near poles are blown out, in Gnomonic, equatorial regions are blown out.

Are all the distorted maps American or do European countries distort them too?

Probably because Mercator maps distort how countries connect with each other.
Look how Russia is floating because it can't connect to its neighbors at scale.
