Converting for political reasons were common in the Medieval era but I doubt Saints like Khan Jahan Ali and Nizamuddin Chisti would do such thing as they are known to be highly tolerant of hindus and others.

Akber's policy was to take away almost all the Jagirs and land grants from the old Muslim families and then granted most of them to his own followers mostly from local rich Hindu families. Muslims, by nature, were/are quarrelsome/fasadi and would resist paying taxes to the Court of Subedar. Hindus would not defy a Court order.
However, this policy of favoring the Hindu created a power vacuum and a time came when it caused a non-resistance to the British expansion after 1757. No resistance was put because of the absence of powerful Muslim families in rural Bengal.
Mughal policy had vanquished Muslim families who would otherwise have worked as local leaders to resist the British. No such event happened after 1757. But, on the other hand, Delhi Mughals had to fight for a long 30 years (from 1576 to 1605) to subdue the local Muslim power that we term as Baro-Bhuyan. They were local Lords or Chieftains.
Baro means multiple in Bengali expression and I found more than 20 Bhuyans who resisted Mughal advances for a long 30 years. Three of them were Hindus (Raja Protapadittyo, Raja Mukundo Dev, Raja Chand Roy and his son Kedar Roy) and all others were the descendants of Afghan Lords appointed by Emperor Sher Shah Suri (1539-1544).
