You singled out cow at first. Islamic ritual is to slaughter a halal animal as a sacrifice, it is not limited to cow nor it is mentioned anywhere that it needs to be cow. However, as a sign of defiance against oppression and oppressors yeah sure by all means do it. And Islamic practice is to say "In the Name of ALLAH ALL MIGHTY" before slaughtering any halal animal even a hen. So limiting the choices and freedom Islam has given won't be an Islamic practice, though halal but in my opinion not recommended.

I am not saying i needs to slaughter cow with newly born calve,or pragnent one.
Actually it was bovine slaughter ban,or beef ban.
But Cow is very respectable for Hindus compared to others..
