These strikes are not symbolic but well planned and executed. They target Iranian supplies to Syrian regime from time to time.More like a few air strikes, which they do about once every two weeks in usually the same areas. The current Israeli policy in Syria is to achieve some objective:
1.) Do some symbolic strikes to get Arab governments to think Israel is countering Iranian efforts in region so Arab governments can normalize with them

Other than that really not much else, they used to do this when Syria was stable too. Syria can't stop these attacks from a military perspective, all they can do is symbolic retaliations, which they are scared of doing. Israel will not go to war under any circumstance, Syria and its allies have many excuses to fire back for even a short period but will not do so.
Damascus is among the most well-guarded environments in the world.Syrian regime army is one most incompetent in the region, its embarrassing to brag about bombing Syria. Especially in its civil war ridden state. Bombing Lebanon is different story, Israel has warned numerous times it could strike Lebanon soon and hasn't done so yet.
Btw, S300 is not being used, it's older missile defense systems.
