Very very few Chinese people eat weird stuff, regular Chinese restaurants only serve regular food, China does have some wet markets, but the number of them are far smaller comparing to those wet markets all across south east Asia, south Asia, Africa and Latin America. Hunting of any forms is strictly forbidden in China so Chinese people eat no bush meat like many US hunters do.
Most wide spread virus plagued humanity were actually not from wild animals, they mostly come from domesticated animals, H1N1 and Spanish flu are from pigs, MERS is from camels, bird Flu is from chicken, foot and mouth disease is from cattles and mad cow disease is from cows...
