Strained yogurt,
Greek yogurt,
yogurt cheese, or
labneh , is yogurt that has been strained to remove its whey, resulting in a thicker consistency than unstrained yogurt, while preserving yogurt's distinctive, sour taste. Like many types of yogurt, strained yogurt is
often made from milk that has been enriched by boiling off some of its water content, or by adding extra butterfat and powdered milk. In Europe and North America, it is often made with low-fat or fat-free yogurt. In Scandinavia, particularly Iceland, a similar product, skyr is produced.

In the Netherlands, strained yogurt is known as
hangop, literally meaning 'hang up'. It is a traditional dessert.
Hangop may also be made using buttermilk.
Make your own
Hangop (very easy!)
Making 'hangop' isn't really hard; within 5 minutes the preparations are done and you have only to wait until the it is ss ready. You can make hangop extra tasty by adding fresh fruit or whipped cream. Or what about hangop with a 'stroopwafel' ?
Delicious, old-fashioned hangop is an old typical Dutch dessert. Back in the day when there was no supermarket that had little buckets of hangop in the fridge/dairy department. In those days, they made hanop in a cloth, just as this recipe will show you. If you make hangop yourself, you can add all sorts of tasty flavors yourself. The hangop available in the shops is always always with apple, but clearly there are so many more tasty flavors!
So, what do you need for home-made hangop?
Essentials

- Sieve
- Pan
- Clean tea towel
In addition
- Some powdered sugar or sweetener
- Perhaps fresh vanilla stick
- Fresh fruit or other tasty topping
How do you make hangop?
- Put a griddle or a sieve into a pan.
- The sieve should not touch the bottom of the pan
- Rinse a clean teatowel under the tap, twist out and then put the dampwet teatowel in the sieve
- The tips of the tea towel you can tie together, which eliminate a messes in the refrigerator later
- Now pour the yoghurt into the towel
- Cover it with a piece of plastic kitchen foil
- Put the yogurt sieve in the fridge for 8 hours
- The water will run out of the yogurt and end up in the pan under the sieve
- What remains in the tea towel is your basic homemade hangop
- Take the hangop with a spoon or spatula and put it it in a bowl
You now have home-made hangop. This you bring to taste with, for example, some powdered sugar or sweetener, you can also stir in some fresh vanilla. Ordinary, sugar is less suitable for stirring through the hangop. Ordinary crystalline sugar is a bit too grainy, so icing sugar is preferred.
You can make the hangop extra tasty by adding fresh fruit. You can also knock up some whipped cream and spatula that through the hangop. That's really delicious. Go wild with the toppings, or you can get or make cookies to go with the hangop. Hangop with Oreo springs to mind.
What kind of yoghurt do you use to make a hangover?
Hangop usually is made with full fat yogurt, but with lean yogurt you can also make a nice hangop. It's still bad calories. Farmers yogurt is usually a fuller kind of yogurt and it is often slightly milder, which also works fine.
