Vietnam-India two-way trade rises to $3.9bln in 2011, up 42% yoy.

Just got some Basa fish fillet (skin-less and boneless) imported from Vietnam. Awesome!!! and cost? Cheaper than our Surmai fillet.
There is some adverse publicity against basa or panga fish fillets in the west. At the same time, I also find that tests carried out by leading institutes found no contaminants.
I wanted the views of Vietnamese friends on this.

Delicious dishes from Tra and Basa fish


Just through simple slaughtering manipulation, Tra and Basa fish changes into fillets of easy cooking size. Tra and Basa fillet and additional products from Tra and Basa fish attract world consumers and chefs for their deliciousness, nutritiousness and competitive price. Recently, Vietnamese researchers have successfully developed a technique to reproduce Tra and Basa fish artificially. This has created a basis for the explosion of Tra and Basa fish industry, bringing great benefit to many enterprises and farmers.

For a surprisingly short time, enterprises and farmers in Mekong Delta River have made a great progress in raising technique. As the result, white Tra and Basa fish products satisfy food quality standards domestically and internationally. After over 10 years of exporting, Vietnams Tra and Basa fish has swum to 136 countries and territories with a total output of 1,140,390 metric tons and a total production area of 5,500 ha. In 2010 alone, the catfish (shark catfish and Tra, Basa fish) export totalled 645,000 metric tons, with a value of 1.4 billion USD. Beside this, enterprises and farming areas achieved a lot of certifications such as Global GAP, SQF, HACCP… from selecting the baby fish to processing feed for the fish. This success makes Tra and Basa fish become a reliable trademark to consumers.

Safe food-global tendency

As the world is seeking for safe and nutritious food, the availability of Tra and Basa fish product high in protein, DHA, Omega 3 creates a wise choice for consumers. Vietnam’s famous Tra and Basa fish raising zones such as An Giang, Dong Thap, Vinh Long, Tien Giang, Ben Tre and Can Tho have been confirmed as meeting the Global GAP and other international standards. This not only assures the quality and safety of the output fish products but also strengthens the trademark of Vietnam’s Tra and Basa fish internationally. Vietnamese enterprises and farmers are paying close attention to develop a clean and sustainable way of the production for the Tra and Basa fish products. Basa in Coconut Curry Recipe

We know that basa is an excellent fish for grilling and this is the first time that we used it in a curry. Basa in Coconut Curry is a spicy, almost-Bengali-tasting curry that has a thick creamy coconut and mustard taste without any mustard at all. We found out about the basa in coconut curry recipe comes courtesy @iphonefresh who also starred in our first Basa hit. We tweaked his recipe a bit while we made it and since both ways turned out happily excellent, try either or try both. This lot serves 3 people comfortably…

Basa in Coconut Curry Ingredients



Basa fillets – cut into cubes – 500 gm
Onion – 1 medium, blended into paste with a little bit of water
Tomatos – 1 medium, blended
Ginger paste – 1/2 teaspoon
Garlic paste – 1/2 teaspoon
Pas phoron – 1 teaspoon
Curry leaves – 2 branches (around 20-24)
Red chilli powder – 1/2 teaspoon
Turmeric – 1/2 teaspoon
Salt – 1 teaspoon
Cumin-Coriander powder – 1 teaspoon (or 1/2 of each separately)
Coconut milk – 220ml
Basa in Coconut Curry Method
Sear the fish pieces for 1 min on each side. This makes sure they don’t break while cooking. The water in the fish should be enough or use 1 teaspoon oil. (the original recipe calls for deep-frying)
In a wide pan, fry the pas phoron and 1/2 the curry leaves. When they start spitting, add the liquified onion, ginger and garlic pastes and fry for about 30 seconds.
Add the masalas, salt and tomatoes. If it’s sticking like crazy (i.e. very little water in the blending process), add 1/2 cup of water and fry till it starts drying – around 3 minutes.
Add the coconut milk and bring it to a boil. Crush the remaining curry leaves and add along with the fish
Simmer for 10 mins – the gravy will be thick and smooth and the flavour will soak into the fish

Crispy Baked Basa Ingredients


Crispy Baked Basa Recipe
1/4 cup mayonnaise

1 tablespoon stone ground mustard
1 teaspoon capers
1 teaspoon ketchup
1/4 teaspoon paprika
1/4 teaspoon hot pepper sauce
1 pound basa (Vietnamese catfish) fillets
1 1/2 tablespoons olive oil
1 cup finely crushed plain Melba toast rounds
salt and pepper to taste
1 clove garlic, minced
1 lemon, sliced
How to make Crispy Baked Basa

Preheat oven to 375 degrees F (190 degrees C).
In a bowl, thoroughly blend the mayonnaise, mustard, capers, ketchup, paprika, and hot pepper sauce.
Brush the basa fillets with about 1 tablespoon olive oil, and roll in the crushed Melba toast to coat. Season with salt and pepper. Use a kitchen sprayer to lightly spray the coated fish with remaining olive oil. Arrange the fish in a baking dish and top with garlic and lemon slices.
Bake 15 minutes in the preheated oven, or until fish is easily flaked with a fork and coating is lightly browned. Serve with the mayonnaise sauce mixture.
Crispy Baked Basa is ready to serve.

I like the way you can't differentiate between your own rhetoric and the reality. True mark of a .....
