Magic of Nehari !

There used to be a “Delhi ki mashhoor Nihari” restaurant on College Road in Rawalpindi during my school days at St Mary’s Murree Road. I tried many time but found it too hot. In Karachi at Burns Road there were also quite a few Nihari sellers but I always found too many green chillies floating around.

On the other hand “ Kunna gosht”, a specialty of Chiniot (half way between Sargodha & Faisalabad) is one of my favourites. I find it ‘Finger licking good’ but because it is too greasy, I don’t eat it very often.

However I admit that many of my friends would die for a good Nihari

Do you know the name of place and restaurant name?

i would like to disagree to an extend.
1. Nonveg food is not entirely depends on muslims in india. though its more popular among them. this brings me to the effect of Partition.
The most affected region by partition was delhi and Punjab. Food tradition of these two places were affected badly by partition. Same food culture get transferred to Karachi and lahore enriching them.

2. Lucknow and hyderabad managed to retain their food culture. Lucknow because of shia identity and Hyderbad becuase of distance and the fact that during the heydays of partition Hyderbad was independent.
so the food culture of these two cities ( and few more : Rampur, Bhopal, Azmer ) remained unaffected by partition.

3. Non veg does not automatically mean Beef. also beef dishes are not best among other meat ( despite the overwhelming wishes of Pakistanis).
Kahsmiri dishes, AWADHI dishes and to an extent Hyderabadi ones are not particularly known to be beef based ( pakistanis will again deny it).

4. Coming back to Nihari : Its origin is in the Draught of 1780 in Awadh ( lucknow). The then nawab started work for food programs in order to help people.
Nihari was the dish of choice for the hard work. One day nawab decided to eat and instantly becomes fascinated by tastes.
No the main point : Nihari being the workers dish of all communities and in keeping the secular tradition of awadh was made from goat meat. of course any one can use meat of his choice.

5. Popularity of Nihari in Karachi is because of nostalgia factor and to an extent due to same factor which makes MQM popular in kaachi. its some thing which they consider as their own.

6. Nihari was not supposed to be all weather 24/7 meat dish. the hot and humid weather of North and central india does not permit it. it was a specialty dish to be have during the early part of day specially in winter season. In india Nehari makers still follow the same tradition. in delhi , hyderabad and lucknow u need to reach the shop by 6 am othersiwse Degh Lut Chuki hogi !

feel free to disagree and add your own POV.

sir ur intelligence is beyond cure.
1. Punjab and Dehli were not the only places affected.
2. I am the product of Lucknovis and Bhopalis(on the oddest note having family in both the GOi and the GOp); so Ill disagree, the tastes of both sides have changed based on a variety of factors of which communal disputes have been there.

3.Ive already clarified that , seems a strawman argument in terms of Nehari and the pointless rant on Pakistanis

4.The origin of pizza was flatbread, cheese and tomato sauce; consider the varities today. However, Nehari has been associated with both Beef and Mutton but the former has always been more popular. Goat meat is not a traditional concept, its a reigional one.

5.hardly, MQM has nothing to do with Nehari nor does ethnicity anymore. Clearly you are trying to connect dots that don't even exist- The dosa is popular is Karachi and that has nothing to do with MQM or anything else.

6. Coca cola was a cough syrup; has not stopped it from being sold and had otherwise.

. .
sir.. it seems Delhi style dishes are more famous in Pakistan be it korma or Nihari. Is it because migration of muslims from Delhi was in comparison of migration from Lucknow and Hyderabad?

There are several shops of Hyderabadi nihari in Karachi.

What is the difference between Hyderabadi and Lucknow nihari?

1. these two along with Bengal were worst affected. Lucknow and bhopal and Hyderabad were relatively less affected.
2. Apart from Beef what else do you think changed. Lifestyle changes is another factor people shying away fro rich heavy food ( but that is another discussion).
3. its not a ranting.it is something i have observed. in any food thread pakistani members always raise beef bogey yo tackle down their indian counterpart. any way tastes in strictly personal and i prefer mutton over Beef in indian dishes and beef over anything else in western dishes.

4. Beef nihari is popular because it costs less !! ( beef is the cheapest or second cheapest meat after pork) MUTTON nalli IS THE most ideal piece of meat to maker Nihari.

5. strictly my theory. wont insist on it.

6. Delhi food culture is beef dominated but kashmir, and awadh is mainly mutton and lamb. hyderbad falls in between.

There are several shops of Hyderabadi nihari in Karachi.

What is the difference between Hyderabadi and Lucknow nihari?
Nihari found in Indian Hyderabad is : mainly Paye ki nihari with ginger powder as prominent masala.
also u will get tongue in Hyderabadi nihari. also some south indian spices are there
Niahri of Lucknow is mainly Nalli based : Fennel seed powder is used more. Paya ki nihari is also available though.

1. Not exactly , the consumption of various staple foods changed due to the borders as well.

2. General lifestyle changes happened due to greater social vegetarian influence.

3. Semantics

4. Not exactly, both goat and beef are consumed in paya and the popularity matters to taste and not cost. That must be an Indian thing of costing less

6. Reigonal variations of today don't link to origin or greater consumption

.
here is how Lucknow Nihari is different from delhi nihari ! see the pics and tell me !!

1. kallu Niariwala ( Delhi)
Fiery red, eye watering, thick layer of oil on top. i think u will get similar ones in Karachi.

now the lucknow version :

rahim ki nihari ( Lucknow)

Pale colored, moderately spicy , but taste is out of this world.

Do you know the name of place and restaurant name?

It was an eating place with a signboard “Delhi ki Mashhoor Nihari”. It was close to the Liaqat Bagh end of College Road. A bakery called ‘Student Bakery’ was also nearby.

I have not been to Rawalpindi for more than 10 years, last time I drove along the Liaqat Garden there were many tyre repair shops on the College Road.

Rawalpindi has changed so much that I could not recognize the place at all. Regret my inability to elaborate further.

Most of the time I had Kunna Gosht was at the home of my maternal uncle in Faisalabad who used to live close to Zail Ghar at the end of Katcheri Bazaar. He had an excellent cook from Chiniot who claimed that the dish was a Chinioti specialty. Sadly my uncle passed way ages ago and the cousins have since moved to People's Colony.

My wife took the recipe from a friend and we cook Kunna Gosht at home on occasion.
