Why would China want to go through all that headache to "find out a way" when other suppliers can provide oil without a headache?
They've had months if not years to "find out a way". You would think they would announce it by now.

That's true, Iran has always been skeptical of Chinese influence, whether in terms of investment/goods/weapons. Whereas the Gulf Arabs have always been enthusiastic to buy from China, including large-scale weapon deals.
But it also serves China's interests to ignore US sanctions, which is why China is continuing to buy Iranian oil regardless.
This will probably be the status quo for the foreseeable future.

People forgot that not long ago India discussed with China in regard to OIL Buyers Group formation..
Both China and India are largest buyers of OIL and both have been buying OIL from Iran and will continue to do same using various loop holes.
Like China dealing in Yuan and India dealing in INR, now that Indian banking channels are also set for same, it would not be difficult like in past. Similarly large refineries will buy oil using 3rd party to avoid sanctions from US.
