That is the whole concept of sacrifice.....You are suppose to raise the animal so that develop a certain bond with it!!And more importantly it's meat!

Bison steaks are pretty lean, and a bit chewy. Dont know about Ibex.

Well I ate a big bison hot dog here in US. It had a half cooked fat sausage, reddish interior inside. So difficult to tell man.
I prefer meat cooked in masala.
