You just set the boring machine in motion and it drives itself. Certainly ventilation will be an issue after it is done for air circulation but I would assume they will also dig some vertical vents.

I wonder why the Chinese project is meant as a tunnel instead of buried pipelines as in the Libyan project called 'Great Man made river project' :

Diameter will be huge to move enough water. I believe the first "Die Hard" movie had guys driving large trucks through the cavernous NY tunnels so you can see the scale.

The libyan project used 4-diameter tunnel :
