I have always admired the Lebanese art of Making Hummus, one of the best ones you can get your hands on.

I loved meditarranean foods.. When I was in Mumbai in Colaba area there are few good lebanese and iranian restaurant who gives yummy Hummus and other foods..

Pls send me recipe if you have (preferrably veggie one)

It is all veggie..
basic..
Chickpeas..
Tahina(found in most large stores)..
lemon juice.. 2 tbsp for say half kg of chickpeas..
and 2 to three cloves of garlic(or the paste.. i guess in ur case MDH or some other company)..
olive oil(generous amounts).
salt to taste.


Boil those chickpeas.. till they turn totally soft.. find a meat grinder or even a blender..shove em in there.. add 1/2 tahina to whatever quantity you are shoving in there.. and mix..
one you see the chickpeas in a grinded form.. add the lemon juice,(crush the garlic if u used the cloves or two to three tbsps of the paste depending on how strong it is)garlic..and mix again..
Add olive oil.. till you get the pasty form shown in the pic of this topic.. and you are pretty much ready to go..

now.. as far as the salt is concerned..
most readymade Tahina's have a bit of salt in em.. but if you think urs is a little tasteless. add salt whilst still in the mixer..and keep at it till you feel ur good.

once out.. in a dish.. or bowl.. put a think layer of olive oil on top.. keeps it from going dry.. and add olives if you wish..

for a bit of desi taste..
i have added cream to it.. once..
saffron.. chilli powder... Parmesan cheese.. and even tried a little jalapeno in it.. which was unbelievably good.

Thanks Santro for your effort but seriously I never heard of Tahina in any store here.. but as checking through google it is sesame flour paste (Til ke Atte ka paste in Hindi/Urdu).. Pls confirm is this the same

Its not paste, its more like sauce...


Grind sesame seed enough and and it will turn into that.

Dear tahnia is that famous indian "til ke chatne" minus the spices..ask your mom and she will make you one!

Garnish with Pine seeds, trust me, it will greatly enhance the taste.

Lebanese put pine seeds in normal seekh kabab as well.

I like my hummus with any sort of meat, especially Shawerma meat. My usual lebanese order is a Mixed Grill (Chicken, beef seekh kababs, shish tawook, mutton kabobs, Arayes and lamb chops), Hummus Shawerma plate with pine seeds, its a pretty big plate so I use that for my other hummus needs and of course, a generous serving of Thoom with that.

Now what is Thoom is another story. It's like mayo, only better :P It's mostly garlic paste.

I like the joints where they make fresh Khubz with some Cinnamon in their flour.
