Galouti Kebab: The Melt-in-the Mouth Delicacy Originally Made for a Toothless King
The legend goes that the Nawab had lost most of his dentures due to old age, but his penchant for kebabs were far from dying. So for their toothless Nawab, the seasoned khansamas came up with a popular variant which needed no chewing yet had the same rich flavours and taste of a kebab. The rich Mughlai cuisine with aromatic spices is a major contributor to the city's old world charm. The birthplace of several delicacies like Lucknawi Biryani, Moti Pulao, Parind Puri and Arvi ka Salan, Lucknow is most famous for its meaty kebab delicacies like Patili Kabab, Tunday Kebabs, Galouti Kebabs etc. Tunde Ke Kabab, also known as Buffalo meat galouti kebab, is a dish made out of minced meat and is part of Awadhi cuisine

Chapli kebab

Chapli Kebab is a Pashtun-style minced kebab, usually made from ground beef, mutton or chicken with various spices in the shape of a patty. It originates from Peshawar. Usually deep fried contrary to Tunday Kebab's shallow fry

Chapli kebab no match.
Poor indians cannot eat because of beef.
There are some foods that you cannot make without beef or they dont remain the same if you make it with chicken or even mutton.
such as nihari, chapli kebab etc.
A thing like chiken and mitton nihari dont exist. There is one thing called nihari and its made with beef.
So is chapli kebab, a chicken or mutton varient doesnt exist.

Several food vlogs showcasing chapli used mutton instead of beef. I guess the primary difference is the style of cooking rather than the meat since Peshawar's Chapli uses beef or mutton while Lucknow's Galouti is mutton while Tunday is it's buffalo version
 
That video is from qalandarabad and not Peshawar. Chapli kebab though are now available around all of KPK with good taste. Genuine chapli kabab is always always beef. Chicken and mutton ones are new additions and dont have the same taste. Beef and Buffalo meat both are used. Originally it used to be cooked in buffalo fat (called dull locally) but due to its health jazards govt have banned use of dull. Even now in a few places the ones cooked in dull are available and believe me the taste of it is amazing.
