I think a bigger problem is, how well-maintained will this ship be? Will it be at the same level of operational-readiness as other Indian surface ships?
The multi-billion dollar refit of the Viki was said to make her like a brand new ship, this is perhaps an exaggeration and her useful life is not going to be as long as a new-build ACC but she is certainly sufficiently modern:
(not as good as you'll find in new-build surface vessels and certainly not as good as you'll find on the future Indian home built carriers but still).
The IN like other modern navies maintains exceptionally high standards amongst her fleet so there is no issue there.
And how many MiG-29K are going to crash per year?
Well one would hope zero but carrier aviation is notoriously difficult and operating high-end supersonic fighters from a medium sized ACC is another level of additional risk risk. One can hope they don't happen but one shouldn't be surprised if they do, that is the nature of the beast.
