After fasting for 30 days, it’s finally time to celebrate Eidul fitr. Preparations for this holy occasion have already begun as Ramazan comes to a close. As soon as the moon is sighted, all that is on anyone’s mind is clothes and food. It is said that galawati kabab is a royal dish. Now, this isn’t like any other regular kabad out there – smokey and fried – galawati kababs are unique mix of east and west. One comment, i dont like the taste of these commercial tandoor pastes. Very easy to make peri-peri which is better and can be made within minutes. if anyone's interested will post my receipe - peri-peri chicken works always. In cape province, malwa is normally made by the population.

Favourite is kalahari beef brisket - just thinly cut (make sure it is deep frozen or aged when getting your butcher to cut, marinade in rock salt, black pepper, a bit of garlic powder. Leave over night. Just braii on very very hot coals.

Instead of fry kebabs - alternative is to grind fresh hunted meat - we just did an impala a few weeks back - took some of the good meat and grinded it; added tad bit of ginger, fresh garlic, black pepper, salt; green coriander and freshly ground coriander seeds; make long skewers and i have a motorised contraption - made in a garage that spins 5 - 1m long metal skewer on the fire - 5 mins. Serve with fresh cut lemon to go over.

food is king always .... cant wait for the next eid - friends make huge pot of local style biryani.

Too much oil in other stews when compared to here.
